Tan Xin Pei, founder of Tan Family cuisine, combined the delicate flavors of the South with the aromatic ingredients of the North to invent complex dishes with sublime and interesting flavors. Today, Tan’s family recipes are served in just two places, and the Golden Flower is one of them. Demanding use of the very finest ingredients and a strict balance of taste and textures, Master chef Liu Guo Zhi and his seven hand-picked disciples ably recreate the best of Tan’s dishes, such as steamed fish maw with crab claw in supreme chicken soup and braised sea cucumber with Shandong leeks.
