Preparation is very slow, using bronze dies and cast iron rollers. The sheet of dough obtained is rough and porous, ready to be rolled out and cut into various shapes and sections. The pasta obtained is then “combed” manually over the back of a knife and laid out on the traditional sheet of hand-folded white paper to then be placed on wooden frames and left to dry for 24-36 hours at a low temperature.
